2 cups flour
1 scant tsp salt
3 tsps baking powder
1 tsp baking soda
2 - 5 Tbls shortening (no trans fats)
7/8 cup soy milk
Mix the dry ingredients.
Cut in the shortening.
Stir in the soy milk, just until the mixture forms a ball.
Knead on a floured surface 10 times.
Press 1/4-inch thick and cut into 2-inch rounds.
Put on ungreased cookie sheet.
Bake at 450F for 7 -9 mins.
