1 lb. boneless, skinless chicken breasts
1 Tbls. vegetable oil
2 cups fresh mushrooms, sliced
2 tsps flour
8 oz. chicken broth
1 6-oz can frozen OJ concentrate, thawed
1/2 cup green onion bulbs (w/o greens), thinly sliced
1 11-oz. can madarin orange sections, drained
Cut chicken into 1-inch chuncks.
Heat oil in skillet; add chicken and brown.
Set chicken aside.
In same skillet, cook mushrooms over medium high, stirring constantly.
Sprinkly flour over mushrooms, stirring quickly to combine.
Gradually stir in broth, OJ and green onions.
Stirring constantly, bring to a boil.
Reduce heat, add chicken.
Simmer for 5 minutes.
Stir in oranges just before serving.
Serve over rice.
