1/4 cup onion, chopped%BR% 2 - 14 oz. cans dice tomatoes%BR% 1 3-oz can of diced green chiles%BR% 2 - 16oz. cans pinto or kidney beans, drained%BR% 1 Tbls. chili powder%BR% 1 tsp. cumin%BR% 12 corn tortillas%BR% 1 -2 cups cheddar cheese, grated%BR% sour cream%BR% %BR% Saute onions in skillet.%BR% Add tomatoes, chiles, beans, chili powder and cumin. %BR% Simmer uncovered 10 minutes.%BR% Cover bottom of 11x8 casserole dish with 4 tortillas.%BR% Reserve a little cheese.%BR% Pour 1/4 of tomatos mixture and 1/3 cheese over tortillas.%BR% Repeat layers, ending with tomato mixture.%BR% Top with reserved cheese.%BR% %BR% Bake at 350F for 30 mins.%BR% %BR% Serve with mixed greens salad.%BR%
